What’s one food that instantly reminds you of home? For me, it’s definitely Disco Fries.
If you haven’t spent much time in New Jersey, you probably don’t know what Disco Fries are. Kind of like the Jersey version of Canada’s Poutine, Disco Fries are simply gravy and cheese fries. The variations, however, differ a little. You may find Disco Fries topped with a cheddar cheese sauce, melted Gruyere, a beef gravy, or a chicken gravy. It really depends on where you have them.

Here, I make my variation of Disco Fries with a delicious Puerto Rican twist, of course! I top my Puerto Rican Pernil Loaded Disco Fries with slow cooked Puerto Rican pernil. It’s juicy, garlicky pork shoulder that is slow roasted for hours and then shredded. I use my slow cooker to make Slow Cooker Puerto Rican pernil, it’s a great way to make this dish without heating up an oven, and the pork comes out super tender.  As if that’s not decadent enough, I top the whole thing with shredded Monterrey Jack cheese and a homemade pork gravy using the drippings from the pernil.

A homemade brown gravy is a must for this recipe, and it comes together quicker than you’d imagine. Just the pernil (pork) drippings, butter and flour transforms into a lovely, rich, and silky gravy to properly crown your crunchy fries.
And the crunchiest, most delicious fries to use? Grown In Idaho Hand-Cut Style Fries, of course!

Puerto Rican Pernil Loaded Disco Fries

A delicious Puerto Rican twist on a Jersey diner classic!

Ingredients

  • 1 package Grown In Idaho Hand-Cut Style Fries
  • 1 cup slow cooker Puerto Rican pernil (shredded pork shoulder)
  • 3/4 cup Monterrey Jack cheese, shredded
  • 1 tbsp butter
  • 1 tbsp all purpose flour
  • 1 cup pernil drippings

Instructions

  1. Cook the fries per package instructions, set aside.

  2. To make the gravy, add butter to a saucepan. Heat on medium-low heat, until melted.

  3. Add the flour and stir to make a paste.

  4. Whisk in the pernil drippings, and bring to a boil, until thickened. Season to taste with salt and pepper and set aside.

  5. Place the fries into a bowl or other serving platter.

  6. Top with pernil and shredded cheese.

  7. Pour the hot gravy on top, then serve immediately.
