Ah, I’m so excited! I can finally feel the summer breeze around here in New Jersey and it makes me want to dance in the sun.  When the weather is good, I’m always in the mood for spending time outdoors, whether that involves a fun backyard barbecue with family and friends or an impromptu road trip.  When I’m looking to flex my tourist muscle, I head to one place…the Big Apple. I’m lucky enough to have grown up 45 minutes outside of New York City, a city with more international types of cuisine than most other places on the planet. One of the highlights of my weekend visits to NYC ALWAYS involves stopping by the nearest Middle Eastern food stand and grabbing a piping hot falafel sandwich, drenched with tahini, a mysteriously delicious garlicky white sauce and a dash of hot sauce.   This delicious vegetarian snack is packed with plant-based protein, which helps me have the energy to enjoy all the sights and sounds of one of the greatest cities on Earth!

Falafel Style Fritters

A creative way to use a veggie burger to make falafel style fritters.

Ingredients

  • 2 MorningStar® Farms Veggie Lovers Burgers defrosted
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 teaspoon ground cumin
  • 2 cloves garlic
  • 1 tbsp red onion, chopped
  • salt and pepper, to taste
  • 2 tbsp flour
  • olive oil cooking spray

Falafel Toppings

  • Pita bread
  • Tzatziki sauce (recipe link below)
  • Lettuce leaves
  • Tomato slices
  • Sliced cucumber

Instructions

  1. Add the MorningStar® Farms Veggie Lovers Burgers, parsley, cilantro, cumin, garlic, red onion and salt and pepper to a food processor. Pulse the mixture just until everything is finely chopped, scraping down the sides as needed. Don't overmix.

  2. Scoop the fritter mixture into a bowl and add the flour.  Mix the fritter mixture until the flour is incorporated (don't overmix).

  3. Spray a bit of cooking spray onto the palms of your hand, then grab a bit of the mixture and form into round falafel style fritters.  You should be able to form 5-6 fritters.

  4. Using an air fryer or convection over, bake the falafel style fritters for 15 minutes at 400 degrees F. 

  5. Split a pita pocket in half, then add two falafel style fritters into each half. Add lettuce, tomato, cucumber and tzatziki sauce. Serve immediately.
