A delicious Puerto Rican twist on a Jersey diner classic!
Cook the fries per package instructions, set aside.
To make the gravy, add butter to a saucepan. Heat on medium-low heat, until melted.
Add the flour and stir to make a paste.
Whisk in the pernil drippings, and bring to a boil, until thickened. Season to taste with salt and pepper and set aside.
Place the fries into a bowl or other serving platter.
Top with pernil and shredded cheese.
Pour the hot gravy on top, then serve immediately.
