Puerto Rican BBQ Ribs (Costillas De Cerdo)

Ingredients

  • 1 package Smithfield Extra Tender Fresh Pork Spareribs contains 2 racks
  • 2 tbsp olive oil
  • 3 tbsp adobo all purpose seasoning available in the Latin food aisle
  • 2 tbsp paprika
  • 2 tsp dried oregano
  • 2 tsp ground black pepper
  • 2 tbsp red wine vinegar
  • 1/2 cup apple juice or chicken stock

Instructions

  1. Preheat your grill to medium low heat.

  2. Rub each rack of ribs with one tablespoon of olive oil.

  3. Combine the adobo, paprika, oregano and black pepper.

  4. Season the ribs thorough with the seasoning mix, making sure to get the sides too!

  5. Grill the ribs for 15 minutes per side, until thoroughly browned on both sides.

  6. Wrap the ribs in aluminum foil, creating a pouch.

  7. Pour the vinegar and apple juice into the pouch, then seal it tightly on all sides.

  8. Place the aluminum foil wrapped ribs back on the grill, on low heat. Cook for 2-2.5 hours, until tender.

  9. Slice the ribs into individual portions and serve immediately. If desired, you can serve BBQ on the side for dipping.
