Cuban Style Shrimp Creole (Camarones Enchilados)

Ingredients

  • 1/2 tbsp olive oil
  • 2 tbsp sofrito fresh or homemade
  • 1 red bell pepper, sliced into strips
  • 1 medium onion, diced
  • 2 cups Clamato® Tomato Cocktail
  • 8 oz can tomato sauce
  • 1 dried bay leaf
  • 1 tsp Sazon seasoning
  • 2 packages SeaPak Shrimp Scampi 12 oz package
  • 1 tbsp red wine vinegar
  • salt and pepper, to taste

Instructions

  1. Heat a large saute pan on medium heat. Add the olive oil, sofrito, red peppers and onions.

  2. Saute for 5 minutes, until the veggies soften.

  3. Add the Clamato, tomato sauce, bay leaf and Sazon seasoning. Cook for 15 minutes, until the sauce reduces and thickens.

  4. Add the frozen Shrimp Scampi, and stir to combine. Once the shrimp turns pink, turn the heat off, add the vinegar, and season with salt and pepper to taste.

  5. Serve hot.
