Tzatziki Sauce

Ingredients

  • 1 cup plain Greek Yogurt
  • 1 teaspoon lemon juice
  • 1 small cucumber seeded and shredded
  • 1 garlic clove grated
  • 1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill
  • 1 tablespoon of chopped fresh oregano or 1 teaspoon dried oregano
  • 1 tablespoon extra virgin olive oil
  • Kosher salt and black pepper to taste

Instructions

  1. Cut the cucumber in half, and use a spoon to scoop out the seeds. Shred the seeded cucumber using a grater or food processor. Spoon the grated cucumber onto a sheet of paper towel, and squeeze out all the liquid you can.
  2. Combine all the ingredients, then season with salt and pepper to taste. Refrigerate the tzatziki to sit for at least 1 hour, so that the flavors can marry.
