Pomegranate Guacamole

  • 3 medium ripe avocados
  • 1/3 cup diced red onion
  • 1/2 cup fresh cilantro chopped
  • Juice of 1/2 a lime
  • 1 cup pomegranate seeds
  • salt and pepper to taste
  • Chips or assorted veggies for serving


  1. Halve and pit the avocados then scoop out the flesh into a large bowl.
  2. Mash the avocados with salt, pepper, and the lime juice until it's to your desired consistency.
  3. Stir in the red onion, cilantro and pomegranate seeds.
  4. Serve with chips or assorted veggies, for dipping.

Recipe Notes

Reserve a few pomegranate seeds for garnish.
