Ropa Vieja (Shredded Beef) Sliders

Ingredients

  • 3 lb flank steak or rump roast
  • 1 tablespoon canola oil
  • Adobo seasoning
  • 1 15 oz can low sodium beef broth
  • 1 1/2 packets Sazon seasoning
  • 2 dried bay leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon Italian seasoning
  • 1 chicken bouillon cube
  • 2 tablespoons sofrito

Ropa Vieja Sauce

  • 1 tablespoon canola oil
  • 2 bell peppers sliced into strips
  • 1 small onion sliced into half rings
  • 2 tablespoons sofrito
  • 1 teaspoon garlic powder
  • 1 heaping tablespoon Hunt's tomato paste
  • 1/4 cup red wine
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper to taste

For Serving

  • Avocado or guacamole
  • Slider rolls

Instructions

To Cook the Beef

  1. Season the beef with Adobo seasoning, to taste.
  2. Heat 1 tablespoon of canola oil in a frying pan, then sear each side of the beef, until it's brown and crusty on all sides, about 3-4 minutes per side.
  3. Place the beef into a slow cooker, along with the beef broth, 1 packet of sazon seasoning, bay leaves, Italian seasoning, chicken bouillon, and 2 tablespoons of sofrito.
  4. Cook the beef on low for 8 hours, until the beef is tender.
  5. Shred the beef with 2 forks, and reserve 3 cups of the cooking liquid.

To Make the Ropa Vieja Sauce

  1. In a saute pan heated to medium heat, add 1 tablespoon of canola oil, then toss in the sliced peppers, onions, and 2 tablespoons of sofrito.
  2. Season the veggies with salt, pepper and garlic powder and cook for 2 minutes.
  3. Add the tomato paste, then cook for 1 minute.
  4. Add the reserved cooking liquid, 1/2 packet of Sazon seasoning and red wine, then simmer the sauce for 10 minutes, until it thickens up slightly.
  5. Add the beef into the sauce, stir to combine, and garnish with fresh cilantro.
  6. Pile your slider rolls up with the ropa vieja, and garnish with avocado or guacamole.
