Barilla® Spaghetti with Chipotle Ground Beef and Cotija

Ingredients

  • 1 lb package of Barilla® Spaghetti
  • 1 tbsp Extra virgin olive oil
  • 1 pound 93/7 lean ground beef
  • 1/2 cup chipotle in adobo sauce
  • 1 can 28oz crushed tomatoes
  • Salt and pepper to taste
  • ½ cup poblano peppers diced (optional)*
  • ½ cup grated cotija cheese

Instructions

  1. Bring a large pot of water to a boil and salt it well.
  2. Meanwhile, heat a pan to medium-high heat and sauté the beef in olive oil for 4-5 minutes or until browned and crumbled.
  3. Add the chipotle sauce and poblano (if using), and sauté for 1 minute.
  4. Add the crushed tomatoes, season with salt and pepper; simmer for 3-4 minutes. If your sauce tastes a bit metallic, add a bit of sugar to round out the flavors.
  5. Cook the pasta according to the package directions, drain and toss with the hot sauce, top with the cheese before serving.
