Authentic Carne Asada (Grilled Steak)

Ingredients

  • 1/4 cup lime juice
  • 2 tbsp white vinegar
  • 1/4 cup avocado or vegetable oil
  • 1/2 of a white onion, peeled about 1/2 cup
  • 8 whole garlic cloves. peeled
  • 1/4 cup fresh cilantro
  • 2 tbsp chili powder
  • 1 ½ tsp ground cumin
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 2 lbs skirt steak or flank steak

Instructions

  1. Place all the marinade ingredients into a blender (everything except the steak). Blend until the onion, garlic and cilantro are chopped finely.

  2. Put the steak into a non-reactive dish or plastic bag. Pour all the marinade over the steaks, and turn them to coat thoroughly. Marinate for a minimum of 3-4 hours.

  3. Preheat an outdoor grill or cast iron grilled to high heat.

  4. Remove the flank steak from the marinade, and discard excess marinade. Cook on the grill for 7 to 10 minutes per side, or until it reaches your desired doneness.*

  5. Once done, remove from heat and let rest 10 minutes. Slice against the grain, and serve.

Recipe Notes

*The cook time all depends on the thickness of the meat, so make sure to use a meat thermometer for accuracy.
