Avocado, Tomato and Watercress Salad

Ingredients

  • 1 bunch of watercress roughly chopped, washed and spun dry
  • 1-2 plum tomatoes chopped
  • 1/2 red onion sliced into half moons
  • 1 ripe hass avocado peeled and sliced
  • 3 tablespoons red wine vinegar
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

  1. Roughly chop the watercress into bite sized pieces.
  2. Wash it thoroughly and spin it dry with a salad spinner.
  3. Chop the tomatoes into large chunks and slice the onion and avocado.
  4. Layer the salad, with the watercress on the bottom.
  5. Arrange the tomato, onion and avocado over the top of the watercress.
  6. Dress the salad with the vinegar and olive oil, and season with salt and pepper.
  7. Serve immediately.
