Vegan Chorizo Cornbread Stuffing

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup celery, diced about 1 stalk
  • 1 cup carrots, diced about 2 carrots
  • 1 cup onion, diced about 1/2 of a large onion
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 cup MorningStar Farms Chorizo Crumbles
  • 1 12 oz boxed cornbread stuffing mix check the ingredient list to make sure it's vegan
  • 4 cups low sodium vegetable broth
  • 1 tbsp fresh parsley, minced

Instructions

  1. Heat a large saute pan on medium heat. Add the olive oil, celery, onion, carrots, garlic and bay leaves.

  2. Cook for 5 minutes, stirring occasionally, until tender.

  3. Add the MorningStar Farms chorizo crumbles, stuffing seasoning packet, and vegetable broth. Stir and bring to a boil.

  4. Add the cornbread cubes, and stir thoroughly to combine.

  5. Transfer the stuffing to a serving dish and sprinkle with parsley before serving. Serve hot.
