So I was inspired to merge these two sandwiches and create this delicious recipe for Avocado BLT Breakfast Bagel Sandwiches. These have quickly become a family favorite that is fit for busy weekday mornings or a lazy Sunday brunch. What Ingredients Do You Need To Make An Avocado BLT Breakfast Bagel Sandwich?
This recipe features creamy avocado, crispy bacon, fresh arugula, juicy tomato, and a sunny side up egg, piled onto a toasted everything bagel that’s been slathered with mayo. The beauty of this sandwich is that you can mix and match foods that you love to make it your own. Prefer turkey bacon or sliced ham? Go for it. Want lettuce instead of arugula? The choice is yours! The result will definitely be delicious!

Avocado BLT Breakfast Bagel Sandwich
- 1 package Thomas’® Everything Bagels
- 1 tbsp olive oil
- 6 large eggs
- 12 slices cooked bacon, cut in half
- 2 ripe avocados, pitted. peeled and sliced
- 2 cups fresh arugula, rinsed and dried or your fave greens
- 6 slices red tomato
- 6 tbsp mayonnaise
- salt and pepper, to taste
Toast the bagels to your desired doneness. Prepare the avocado, tomatoes, and arugula. Set aside while you cook the eggs.
Add the olive oil to a small frying pan, and heat to medium low heat. Crack an egg into the skillet. Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, 2 to 2 1/2 minutes. Slide the eggs out of the skillet. Season with salt and pepper. Repeat with the other eggs.
Assemble each sandwich by spread 1 tablespoon of mayo onto the bottom half of each toasted bagel. Divide the bacon, tomatoes, avocado, arugula and eggs per sandwich. Sprinkle with salt and pepper to taste, then top each bagel sandwich with the top half of the toasted bagel. Serve immediately.
