Arroz chaufa is something that I never knew I needed…until I tried it. Peruvian food was not something I grew up eating, so when I was introduced to it by my Peruvian sorority sister, Jackie, I had no idea what to expect. I soon discovered that Peruvian food is eclectic and has been heavily influenced by both its native people (such as the Quechua), as well as by various cultures that have immigrated over centuries.

Arroz chaufa is a chifa style dish, which refers to dishes that are influenced by Chinese immigration to Peru in the late 19th and early 20th centuries. Chifa is culinary tradition based on Chinese Cantonese elements fused with traditional Peruvian ingredients and traditions. The term chifa is also used to describe a restaurant where this type of food is served. Chinese-Peruvian food has become one of the most popular types of food in Peru; there are thousands of Chifa restaurants across all districts of Lima and many more throughout other cities of Peru, with sometimes multiple independent restaurants operating in close proximity on a single city block.

Arroz chaufa is a fried rice dish that makes for delicious and fast meal, and it’s a fantastic way to use leftover protein. Leftover pork, chicken, steak, seafood and even hot dogs are a typical addition to this dish. Arroz Chaufa (Peruvian Fried Rice)

Ingredients

  • 1 tablespoon canola oil
  • 2 garlic cloves minced
  • 1 tablespoon fresh ginger minced
  • 3 eggs scrambled and chopped into bite sized pieces
  • 4 cups Minute Read to Serve Whole Grain Brown Rice
  • 3 cups cooked protein cut into bite sized pieces (I used calamari and shrimp)
  • 1 medium bell pepper diced
  • 8 scallion sliced thinly (set aside 2 tablespoons for garnish)
  • 1/4 cup low sodium soy sauce
  • 1/2 teaspoon sesame oil
  • 1 teaspoon agave nectar
  • 1/4 teaspoon ground cumin
  • salt and pepper to taste

Instructions

  1. Mix the soy sauce, sesame oil, agave nectar and cumin.
  2. Heat a large skillet over medium heat.
  3. Add the canola oil, garlic, scallions, ginger and red bell pepper. Cook for 4-5 minutes, or until the veggies soften.
  4. Add the rice into the pan, along with the soy sauce mixture. Cook the rice for 10 minutes, stirring occasionally, to allow the soy sauce to absorb into the rice.
  5. Add the cooked protein and scrambled eggs, and stir to combine. Cook for another 5 minutes, tossing occasionally.
  6. Season the mixture with salt and pepper to taste, then garnish with the remaining chopped scallions.
  7. Serve immediately.
