Milanesa de cerdo was, and still is, my favorite way of eating pork as a child. There’s just something about a juicy, garlicky, tender, crispy pork chop…really, what could possibly be wrong with that? My air fryer milanesa de cerdo is marinated with garlic, lime and Latin spices and then wrapped in a crispy breadcrumb coating to create the perfect combination of textures and flavors. Breaded pork cutlets are a staple around the world. Germans and Austrians calls it schnitzel, the Japanese calls it tonkatsu. Milanese de cerdo is a Latin American variation of an Italian dish where generic types of breaded meat fillet preparations are known as a milanese.

The milanesa was brought to Argentina, Chile and Uruguay by Italian immigrants during the mass emigration called the Italian diaspora that occurred between the 1860-1920s. Its name probably reflects an original Milanese preparation, cotoletta alla Milanese, which is similar to the Austrian Wiener Schnitzel.

A milanesa consists of a thin slice of beef, chicken, veal, or sometimes pork. Each slice is dipped into beaten eggs, seasoned with salt, and other condiments according to the cook’s taste. Each slice is then dipped in bread crumbs (or occasionally flour) and shallow-fried in oil, one at a time. Some people prefer to use very little oil and then bake them in the oven as a healthier alternative. I love using my air fryer for this recipe because you get a super crispy coating, with none of the grease.

These tender, crispy pork chops are perfect with a side of rice and beans, some sweet plantains and sliced, ripe avocado. I also love putting these cutlets into a sandwich with some lettuce, tomato and mayo. So, so good! Air Fryer Milanesa de Cerdo (Breaded Pork Chops)

Ingredients

  • 1 package Smithfield All Natural Boneless Pork Chop about 1 ½ lbs
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 garlic cloves, minced
  • tsp all purpose adobo seasoning available in Latin/ethnic food aisle
  • 1 cup all purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • olive oil spray, for air frying

Instructions

  1. Place each boneless pork chops between 2 sheets of waxed paper and use the smooth side of a mallet (or a rolling pin) to pound them until they're very thin. If you think they're thin enough — pound 'em a few more times! The thinner the better.

  2. Place the cutlets into a dish and marinate with the olive oil, lime juice, garlic and 2 teaspoons of adobo seasoning. Set the other ¼ tsp of adobo seasoning aside.

  3. In a dish, whisk the eggs. Place the flour in another dish. Place the breadcrumbs in a third dish and mix in the ¼ tsp of adobo seasoning. Set the 3 dishes aside for a sec.

  4. Dredge the pork chops 1 at a time in the flour, then quickly dunk both sides in the egg mixture and then coat both sides in the breadcrumbs. Lay each piece on a plate until you're ready to cook them.

  5. Spray the breaded pork chops with olive oil spray on both sides, then air fry for 15-20 minutes at 350 degrees F, flipping half way through, until the milanesa are crispy and cooked through.

  6. Serve hot with your favorite Latin sides, like rice and beans.

  1. This recipe looks really tasty, however, I do not own an air fryer. What would be the cook time in a regular oven? Would it be best to cook them at 350 or 400 degrees?

    1. I would go with 400 degrees F, and cook them on a sheet tray lined with a baking rack, this helps promote air circulation and helps the bottom from getting soggy. Make sure to flip halfway through. Not sure if the cook time, but you want to make sure the pork chops internal temp is 155 degrees F.
