Instant Pot Pulled Pork Hash

On busy weeknights, when I want to eat something fast and delicious, I usually throw together a quick potato hash, using veggies and leftover protein I have in the fridge. Throw a fried egg and some hot sauce on top, and you have a super quick and easy dinner that everyone will love.  This Instant Pot pulled pork hash does just the trick!

 For fast cooking,  I love using my Instant Pot. It makes whipping up dinner so quick and easy, which is what I’m all about on busy days. While the pork is cooking, you can make your hash. For an even faster weeknight meal, make your pork the night before, and shred it up.  At that point, you can literally put this pulled pork hash together in 25-30 minutes. Leftovers are fantastic inside of a breakfast burrito or as an addition to an omelette/frittata.

Instant Pot Pulled Pork Hash

A savory dish featuring pulled pork made in the Instant Pot!

Ingredients

  • 1 Smithfield Applewood Smoked Bacon Pork Loin Filet
  • 2 tbsp olive oil divided
  • 1 cup low sodium chicken broth
  • 1 jar tomatillo salsa
  • 1 1/2 lbs new (red) potatoes
  • 3/4 cup poblano peppers, diced
  • 3/4 cup white onion, diced
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • salt and pepper, to taste

Add Ons

  • fried eggs
  • avocado
  • chipotle mayo
  • hot sauce

Instructions

  1. Place the cut potatoes into a microwave safe bowl. Cover with plastic wrap, then microwave the potatoes for 10-12 minutes, until they're tender. Set aside.

  2. While the potatoes cook, heat a saute pan on medium heat. Cut the pork into 8 pieces. Add one tablespoon of oil into the pan, then sear the pork for 2 minutes on each side, just to get them a nice golden color.

  3. Add the pork to your Instant Pot insert. Pour the tomatillo salsa and chicken broth over the pork. Close the instant pot and press the meat/stew button. Once the pork is done, allow the steam to release naturally.

  4. In the same pan that you seared the pork, add the remaining tablespoon of oil. Over medium heat, add the diced poblanos and onions. Season with salt and pepper. Cook for 2-3 minutes.

  5. Add the potatoes, paprika, garlic powder and cumin. Cook for 5 minutes, tossing occasionally.

  6. Remove the pork from the instant pot and shred with a fork.

  7. Layer the hash mixture with the shredded pork.

  8. Add a fried egg, or whatever other toppings you like!

    This can probably be done in a crockpot as well also….right? (It will just take away from the “time” factor. I only ask because I do not have an Instapot in my appliance collection just yet! LOL)
