For those of you who’ve followed my blog for a while (thank you!), you’ll know that I’m obsessed with avocados. Heck, I have a whole section of avocado recipes dedicated to my love of this creamy, dreamy fruit. Honestly, I don’t think there is anything I love more than a big ol’ bowl of guacamole. I can down a tub of guac all by myself, no apologies. It’s just so delish! Every now and then, I like mixing up my guacamole recipe by adding some fruit, like pineapple, mango, or in this case, pomegranate seeds, which are such a gorgeous seasonal fruit available in the fall and winter. Let me tell you, pomegranate guacamole is out of this world!
You should do everything in your power to add more pomegranate to your life. Pomegranates contains some of the highest concentrations of anti-oxidants of all fruits. Regular consumption of pomegranate seeds and/or juice is though to inhibit abnormal platelet aggregation that could cause heart attacks, strokes and embolic disease. You can read more about the health benefits of pomegranates, the benefits really do go on and on, and if that wasn’t enough, pomegranates are delish! In this recipe, they add a hint of sweetness that balances perfectly with the savory avocado. Something tells me this is going to become a staple guacamole recipe in your home!
3 medium ripe avocados
1/3 cup diced red onion
1/2 cup fresh cilantro, chopped
Juice of 1/2 a lime
1 cup pomegranate seeds (reserve a few for garnish)
salt and pepper, to taste
Chips or assorted veggies for serving
Halve and pit the avocados then scoop out the flesh into a large bowl.
Mash the avocados with salt, pepper, and the lime juice until it’s to your desired consistency.
Stir in the red onion, cilantro and pomegranate seeds.
Serve with chips or assorted veggies, for dipping.
Pomegranate Guacamole
Ingredients
