Quick, family friendly dishes that can please a crowd are my mother’s specialty.  She’s a woman of many talents, and that definitely reigns true in the kitchen.  My mother’s delicious cooking was the foundation for my love of food, and the power it has to bring families together.  Dinner was something I always looked forward to growing up, because it meant sitting at the table with the ones I love, and sharing a great meal and conversation.

Salt and pepper to taste
½ cup poblano peppers, diced (optional)*
