Corn on the cob is one of my all time favorite sides. How can you make corn even better? Do what Mexico does, and slather it with mayo, cheese and spice, of course! I love me some Mexican street corn (AKA elotes)! Elotes are the perfect balance of crunchy, sweet, tangy and salty, they’re totally mindblowingly delish. I always order Mexican street corn whenever I go to a summer festival or fair. Then I proceed to cover my face with mayo and cheese. It’s a totally glam experience, trust me. For a crowd, my Mexican street corn salad is the perfect way to get all of the delicious flavor of an elote, in an easy to eat, picnic friendly form.
What is Mexican Street Corn (Elotes)?
If you’ve haven’t had Mexican street corn, essentially it’s a roasted ear of corn, slathered in mayo, then rolled in crumbled cotija cheese, and sprinkled with chili-lime powder. They’re as ubiquitous as hot dogs are to NYC, you can literally find eloteros everywhere in Mexican, selling this mouth-watering treat on a stick!
What Ingredients are used to make Mexican Street Corn (Elotes)?
The main ingredients for Mexican street corn are roasted corn, mayo, cotija cheese and chili lime powder. I know what you may be thinking, because I thought the same thing….mayo on corn?!?! OH YEAAAA, you HAVE to try it. I promise you won’t regret it. Some eloteros also slather the roasted corn cob with butter. To make this Mexican street corn salad, I take all the ingredients you would use to make a traditional elote, add a little onion (totally optional) and cilantro for even more zesty flair, and you get a show-stopping side that’s way more interesting than boring potato salad.

Mexican Street Corn (Elote) Salad
A spoonable twist on a Mexican street fare classic.
Ingredients
- 3 cups corn kernels
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese you can substitute feta
- juice of 1/2 lime
- 1/2 tbsp chili lime powder recommended brand: Tajin
- 1/4 cup minced fresh cilantro
- 1/4 cup diced red onion optional
Instructions

Mix all the ingredients together in a bowl. Serve immediately or store in the fridge for up to 2 days.

Hi! Question did you use canned corn or did you cook actual corn and then cut off the kernels?
I use fresh corn and cut it off the cob. You can also use frozen corn that’s been toasted in a pan.
