Avocado toast might just be the easiest recipe in the history of life. I like to call it my lazy breakfast. When I need to eat something fast, yet satisfying and sustaining, this is my go-to breakfast! The creamy avocado kicks the pants off plain old butter and jam, plus it’s much healthier for you! Avocados are filled with healthy fats that may help to lower your bad cholesterol levels, and are the best fruit-based source of Vitamin E. Try out this recipe next time you’re in a breakfast time crunch, I’ll bet avocado toast will become a morning staple in your kitchen!
2 slices of your favorite sliced whole-grain bread, toasted
1 small ripe Hass avocado
1 teaspoon lemon juice
2 teaspoons olive oil
Salt and pepper, to taste
Toast the bread in a toaster, until it’s toasted to your liking.
Cut the avocado in half, and scoop out the flesh with a spoon into a bowl. Mash the avocado with a fork, and mix in the lemon juice.
Spread half of the mashed avocado into each slice of toast, then season with a sprinkle of salt and pepper. Drizzle 1 teaspoon of olive oil onto each slice of toast. Serve immediately.
