Buffalo Chicken Empanadas | Delish D'Lites

I’m always thinking of ways to remix Latin staples to create memorable dishes that are perfect for a crowd. When it comes to hosting game day festivities, I’m a huge fan of portable finger foods, and my buffalo chicken empanadas are a delicious spin on this game-day classic.  Served with a blue cheese dressing on the side for dipping, they’re a mess-free way to enjoy buffalo chicken! The creamy, tangy buffalo chicken empanada filling tastes just like buffalo chicken dip, it’s just so, so good!

I love empanadas because you can fill them with almost anything, and with the right combo of dips and condiments, folks can customize their empanada eating experience!  This is why I always make sure to have an assortment of TABASCO® Brand products on hand, for game day, and every day! For whatever dish you’re trying to prepare, TABASCO® Brand comes in a variety of flavors and has something for everyone! You can find them at your local Walmart, in the condiment aisle.

Whether used as an ingredient or as a condiment, TABASCO® Sauce is the one sauce that can be found anywhere in the world, adding flavor to virtually any type of cuisine. I’m particularly fond of the green sauce, because I’m a bit of a weakling when it comes to spice. Green Sauce is made with Jalapeño peppers, for flavor that’s not too wild and not too mild. It is the TABASCO® Sauce flavor with the lowest Scoville Heat Units. It is most often used as a condiment for Mexican cuisine.

My hubby’s favorite is the Chipotle flavor, he slathers it on everything, especially homemade burrito bowls! Made with smoke-dried jalapeno peppers, this sauce brings a rich balance of smoke and heat. It pairs especially well with any kind of protein dish. It can be used in marinades and as a condiment over prepared meats. It can also be combined with pineapple for a sweet-savory dish.

I find that my family members tend to love TABASCO® brand Original Red Sauce. It’s made with just three ingredients: aged red peppers, salt and distilled vinegar. Its simple ingredients and simple processing make it the most versatile hot sauce that can be used in just about any food or drink. It is Non-GMO, Gluten free and has zero calories. Buffalo Chicken Empanadas

This game day inspired recipe is a tasty fusion of American and Latin cuisine, and it’s a total touchdown!

Ingredients

  • 8 oz cream cheese softened to room temperature
  • 4-5 tablespoons TABASCO® Green Jalapeño Sauce
  • 1 packet salt free/low sodium ranch dressing mix or 1/2 packet regular
  • 1 1/2 teaspoons ground paprika
  • Salt and pepper to taste
  • 3 cups cooked chicken breasts, shredded about 3 breasts
  • 20 frozen empanada discs, defrosted for baking
  • Cooking spray

Instructions

  1. Mix the cream cheese, TABASCO® Green Jalapeño Sauce, ranch dressing mix and paprika using a stand mixer or hand mixer until the mixture is smooth. Taste for salt, and adjust accordingly with salt and pepper to taste.

  2. Fold in the shredded chicken into the cream cheese mixture. Set aside.

  3. Place a heaping tablespoon of filling into the center of each empanada disc. Fold over and crimp the edges with a fork.

  4. Spray the empanadas lightly with cooking spray, then bake at 375 degrees F for 12-15 minutes, or until golden brown.

  5. Serve with a side of blue cheese dressing for dipping.

I like to buy a couple of rotisserie chickens to make this recipe even faster!
