I really don’t understand why we wait until Thanksgiving to enjoy stuffing. Every year, I tell myself I’m going to make stuffing throughout the year…and every year, I realize that absolutely did not happen. But it’s ok, because as they say, good things come to those who wait. Well, I’ve waited, and I’m ready! If you ask me, it’s all about the sides during the holidays. GIVE ME ALL THE CARBS!
My dad is the official stuffing chef of the family, and he takes his role very seriously. The stuffing is always the last item to be made, so that it’s piping hot and fluffy when it comes to the table. His recipe features crumbled pork sausage, and it’s so good! But this year, Thanksgiving is in my house, and I needed a recipe that could be enjoyed by everyone, including my vegetarian and vegan friends and family. That’s why I’m so in love with the new MorningStar Farms Chorizo Crumbles, available at Walmart! These new Chorizo Crumbles add a spicy kick to any of your favorite recipes. With 9 grams of plant-based protein they’re a zesty addition to any meal.
In honor of my dad’s traditional recipe, I’m using boxed cornbread stuffing mix, and doctoring it up with these delicious MorningStar Farms Chorizo Crumbles, and some fresh veg. I love this sort of semi-homemade cooking, after all, the holidays are stressful enough without me trying to make everything from scratch. You have better things to do with your time, am I right? Even better, I can make a delicious vegan dish, that everyone will love. MorningStar Farms products are not only for vegetarians – they are for everyone! Vegan Chorizo Cornbread Stuffing
- 1 tbsp olive oil
- 1/2 cup celery, diced about 1 stalk
- 1 cup carrots, diced about 2 carrots
- 1 cup onion, diced about 1/2 of a large onion
- 2 cloves garlic, minced
- 2 bay leaves
- 1 cup MorningStar Farms Chorizo Crumbles
- 1 12 oz boxed cornbread stuffing mix check the ingredient list to make sure it's vegan
- 4 cups low sodium vegetable broth
- 1 tbsp fresh parsley, minced
Heat a large saute pan on medium heat. Add the olive oil, celery, onion, carrots, garlic and bay leaves.
Cook for 5 minutes, stirring occasionally, until tender.
Add the MorningStar Farms chorizo crumbles, stuffing seasoning packet, and vegetable broth. Stir and bring to a boil.
Add the cornbread cubes, and stir thoroughly to combine.
Transfer the stuffing to a serving dish and sprinkle with parsley before serving. Serve hot.
