During the summer, I love making light, vibrant dishes that don’t weigh you down. My strawberry, arugula and feta salad celebrates the bounty of summer by combining sweet, fresh strawberries with peppery arugula, salty feta and crunchy toasted almonds.
Paired with a delicious homemade balsamic vinaigrette, this dish is a balance of sweet, salty, tangy and fresh. My homemade balsamic vinaigrette is the bomb! It’s so easy to make, and pairs perfectly with the sweet strawberries and verdent arugula. I love keeping extra balsamic dressing on hand, for drizzling over fresh cut tomatoes, mozzarella and basil.If you like dressing to be less tangy, feel free to add more olive oil, to your taste.
Don’t like strawberries? This salad would be great with all kinds of fruit! Try blueberries, peaches, plums, apples, or even dried cranberries or cherries!
Not into almonds? Feel free to sub pecans, walnuts, or even pine nuts!
Not crazy about arugula? Swap out for your favorite leafy green! Romaine, baby spinach, or baby kale would be perfect!
Not a fan of feta? Swap out for crumbled blue cheese, shaved parmesan, crumbled goat cheese, or skip the cheese all together!

Strawberry, Arugula and Feta Salad
A summery, fresh salad bursting with sweetness.
Ingredients
- 5 cups baby arugula leaves
- 1 cup fresh strawberries sliced
- ¼ pound feta cheese cubed
- 1/3 cup sliced almonds toasted
- 1/3 cup balsamic vinegar
- 2 tablespoons agave nectar or honey
- 1 teaspoon dijon mustard
- 1/3 cup extra virgin oil
- Salt and pepper to taste
Instructions

To make the balsamic vinaigrette, combine the balsamic vinegar, agave (or honey), dijon, and a pinch of salt and pepper in a blender or food processor.

With the blender on, stream the olive oil in very slowly until the dressing is completely emulsified. Set aside.

In a large bowl, add your arugula.

Next, top the salad with the sliced strawberries, feta, and almonds.

Drizzle the salad with 2-4 tablespoons of the balsamic vinaigrette and toss lightly.

Reserve the rest of the vinaigrette for serving.

Serve immediately.
